These protein lined casings are made only to be used with dry-cured sausages. There is a coating of protein on the inside of these casings that provides them the capability to adhere to the meat when it is drying. You just need to soak these protein lined casings for 20 - 30 minutes before stuffing. It measures about 2-3/8" when stuffed, and comes 24" Long. A bundle of 20, this protein-lined casing is not at all edible, and have the stuffing capacity of approx. 2 1/2 lbs.
